"Clean and crystal clear, light gold color with bright and brassy hues in the glass. The floral intensity leaps from the glass with a powerful combination of rose petals, lychee fruit and red apple. A slight hint of cider and bruised apple linger on the back of the nose, yet co-mingle with a delicate fresh mint influenced forest floor. Further aromatic joy develops in the glass led by hints of lemon oil, candied ginger and exotic spice. The first impression on the palate shows the evolution from bottle age. There is a slight oxidative character with fruit flavors of dried pear, spiced fig, lychee and ripe red apple. Secondary notes of mushroom, dried leaves and bitter spice find a place in the basket of flavors. A touch of residual sugar adds weight and texture to the palate profile, but the finish is fresh with requisite acidity for a harmonious balance. The fruit was partially whole cluster pressed and partially skin contacted for four hours. After pressing, the juice was settled and racked to small stainless steel tanks where the juice was fermented using VL1 strain yeast for sixteen days. Fermentation was halted using a chiller, and the wine was then lightly bentonite fined, filtered, and bottled.
