Tasting Notes
"Salmon pink color with slight copper hues and delicately foggy with unfiltered particles. The effervescence seems subtle with tiny bubbles in the glass. On the nose, crushed strawberries and fresh red and Rainier cherries. Bruised peaches and watermelon candy play with a soft touch of earth and mineral that sits in the back of the glass. As the wine gets to the palate, it is soft and light with fizz, yet mouth filling with the combination of strawberries and crushed cherries that carefully carry the whisper of mineral, fresh flowers and watermelon candy on to the long and lingering finish. A pleasant hint of stem and grape bitterness adds character and definition tot he raw nature of the crushed red fruit. Winemaking Notes
The juice was whole cluster pressed from Pinot Noir fruit, lightly bentonite fined, and settled. The juice was then racked to tanks, where it was fermented in small lots for thirty days at low temperatures. Fermentation was halted using a chiller, and the wine was racked, blended, filtered, re-inoculated, and bottled. This sparkling wine contains some natural sediment; it has not been disgorged nor had a dosage added.
